Let's face it. When taste-compared to white rice, brown rice doesn't stand a chance. We all know it's healthier for us but coming around to eating it is difficult. Especially when white rice is an alternative. Not after this recipe! Even my husband hated brown rice until I started cooking it for him THIS way! (And he's a health nut.) This technique is easy and produces great results by simply using a rice cooker! I create other meals from brown rice so I thought I would share this little cooking secret! Maybe it's because I used to live in Idaho but I love a good potato. Now, cut it into a stick and fry it up...that's even better! Yes, I'm talking about the french fry. (Nothing french about it though- they're actually called "french" because of the style of the cut.) I know some french fries aren't the healthiest of items, especially when you eat them at specific restaurants. Take McDonalds for instance...they have graciously listed the ingredients of their french fries (which you would think should look something like this: Potatoes. BUT instead looks something like this: "French Fries: Potatoes, vegetable oil (canola oil, hydrogenated soybean oil, natural beef flavor [wheat and milk derivatives]*, citric acid [preservative]), dextrose, sodium acid pyrophosphate (maintain color), salt. Prepared in vegetable oil (Canola oil, corn oil, soybean oil, hydrogenated soybean oil with TBHQ and citric acid added to preserve freshness). Dimethylpolysiloxane added as an antifoaming agent. CONTAINS: WHEAT AND MILK. *(Natural beef flavor contains hydrolyzed wheat and hydrolyzed milk as starting ingredients)" YIKES! I know I have shared this before but it still kills me. Why do they need all those extra things? Now on the opposite end take In N Out - which when you walk in their doors, your french fries are still in the form potatoes! Alright, enough about restaurant french fries. Let's make some at home! French fries are a lot easier than they look. And you really don't need a special french fry making tool or anything. It could help but it's not necessary. In fact, when I made my fries I used a regular ol' knife. :) There's 2 different options on HOW to cook them below. One way allows you to make them simultaneously with my hamburger buns. They can cook side by side in the oven. Then once you decide how you want to cook them there's HOW you want to season them. Oh yes...it's another zucchini recipe! The stuff is seriously multiplying like a weed in my garden. Tell me if you're fed up with the recipes, but they're all a great way to consume this vegetable! You could always pawn it off to a neighbor if you're having the same problem as me! Come to think of it, we are constantly getting new neighbors where we live...maybe I should start giving out in neighborhood welcome baskets! ;) This is one of my easy go-to recipes when I want to use it as a side dish for dinner. 4. Place on preheated pan and cook until lightly browned on one side. Flip and cook the same way on the opposite side. Serve warm, refrigerate any leftovers in an airtight container. If you're not worried about being Vegan or Dairy Free, you can add 1 Tbsp of Parmesan Cheese for a extra yummy treat! Though this may not be my best picture of food...this recipe is AMAZING. It's been extended-Nielsen Family tested and approved. Even the gluten and dairy eaters loved it! I love using Tinkyada's Brown Rice Spirals for this. They cook up really nice and keep their texture. This side dish is super fast to mix up and throw together thanks to my premixed Italian Dressing Seasoning Packet mix from last week's post! They go great with almost any meal and are definitely a crowd pleaser. Remember, if you can, use organic potatoes since they are on the dirty dozen list. Have leftovers?If you ever end up with leftovers (which is hard to do since these are so yummy!) you can "stir-fry" these up in the morning in a skillet for breakfast! Simply heat with a little oil over medium to medium high temperature until reheated. (They go great with eggs!) Sometimes it's just easier to eat your vegetables when they are hiddin'. This recipe is really easy to throw together and cooks fast. It also gives a great flavor to a kind of bland vegetable. You can use it as a quick snack or a side dish to a main meal. If you are not dairy-free you can also sprinkle some Parmesan cheese in with the breadcrumbs to give an extra tasty kick. TIP from jalene: To make sure your breading doesn't get clumpy you can dip your zucchini in the egg then place on a cooling rack over a drip-plate. This allows excess liquid to drip off before you shake them in your breading bag. This next recipe can be used as a side dish to stir-fry or it can be made into it's own meal by adding some extra things. See my notes below for help. Notes from jalene:Always start out with a small amount of hot sauce and work your way up. I've ruined one too many meals by starting with too much! Each person has a different "HOT" definition so adapt this to your taste. Check out this BLOG on how to cook brown rice. You can do this the night before or the morning of the day you plan to make this meal. Then just stick the rice in an airtight container in the fridge to cool. Did you know rice also freezes! You can make a big batch of rice and then store it in zip-lock bags in the freezer. This recipe is also great with leftover rice and, of course, white rice will work as well. You can make this into a meal by adding 1 cup diced cooked chicken or 1 cup rinsed and drained black beans. |
